Kukupaka (Chicken in Coconut)

INGREDIENTS

* 1 whole or cut up chicken
* Juice of 1 lemon
* 1 tsp salt
* 1/2 tsp turmeric
* 1/4 tsp garlic (crushed)
* 2 to 3 oz butter
* 4 boiled potaotes
* 4 boiled eggs


Kukupaka Sauce:

* 1/2 can coconut cream
* 1 1/2 cup water
* 1/4 cup milk
* 3 to 4 green chillies (optional)
* 1/4 tsp turmeric
* 1 small tomato (chopped fine)
* coriander leaves (garnish)

 

PREPARATION

In a bowl, combine the following: lemon juice, salt, turmeric and crush garlic.

Mix well then marinade the chicken in this sauce for 1 hour in refrigerator.

Remove chicken and brush with melted butter.

Brown chicken evenly under a broiler.

In another pot, mix all the ingredients for the sauce and bring to a low simmer.

Place chicken in pot over low heat and simmer in the sauce till chicken is cooked.

Add boiled potatoes and eggs to the sauce.

Garnish with coriander leaves.

Serve with steam rice or Indian naan bread.
